Avocado Caprese Salad

Ingredients
- 3 tablespoons balsamic vinegar
- 2 tablespoons extra-virgin olive oil
- ½ teaspoon salt
- ½ teaspoon ground pepper
- 1 ½ cups multicolored cherry tomatoes, halved
- 2 ripe avocados, diced
- 4 ounces small fresh mozzarella balls
- 1 tablespoon drained capers (optional)
- ½ cup lightly packed fresh basil leaves
Instructions
- Whisk vinegar, oil, salt and pepper together in a small bowl.
- Combine tomatoes, avocados, mozzarella and capers (if using) in a large bowl.
- Add the dressing and basil. Toss to coat.
